Make-Your-Own-Mix

This recipe was used by my mom as a base for pancakes, muffins, and bisuits; I suppose it it similar to Bisquick, and I'm sure there are many versions out there, but this one works for me. I copied it from my Mom's Robin Hood Cookbook when I was first moved out on my own, and I have used it since then.  I looked for it on the Robin Hood website, but couldn't find it anywhere.

10 cups flour
1/3 cup baking powder
1 tbsp salt
1 pound (2 1/2 cups) shortening
1. Mix dry ingredients together with a wire whisk.
2. Cut in shortening with a pastry blender, not too fine
3. Store in a sealed container at room temperature.
(This makes 16 1/2 cups of mix)
Note: When measuring mix, spoon into a dry measuring cup. DO NOT PACK.

PANCAKES



1 1/2 cups Make-Your-Own-Mix
1 tbsp sugar
1 egg - beaten
1 cup milk
1. Stir sugar into mix.
2. Add egg and milk, use whisk to stir until blended.

This will make about 12 x 4" pancakes.

DROP BISUITS
2 1/2 cups Make-Your-Own-Mix
1 cup cup milk

1. Add all milk, stir gently with fork until all ingredients are moistened
2. Drop spoonfuls onto baking pan (I use parchment paper)
3. Bake 8-10 minutes in a 450 oven


Used in Chicken Pot Pie meal.

Cheesy Drop Biscuits
Variation #1
2 1/2 cups Make-Your-Own-Mix

add to dry:
1 cup shredded cheddar cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/8 tsp cayenne pepper
when blended together add:

1 cup cup milk

Mix with a fork until moistened.  Drop onto baking pan (I line with parchment paper) and place into a 450 oven for 8-15 minutes, depending on how big you make the biscuits.
 

Today, I used all the dough to make only 9 biscuits. I sprinkled Paprika on each biscuit before I put them into the oven. They were made large because I only had time for one pan.  I will make them smaller  next time.
 
 
I just created this combination and it was outstanding.  Everyone wanted more, and that is a good way to end a meal.
 

These were served with Chicken Soup.
 
Note: I could taste the cayenne pepper as an after taste, but not spicy at all, so don't be scared to use Cayenne pepper - besides it is good for your health.
